2 white fish fillets (cod, haddock or monk fish)

4 shiitake mushrooms, finely sliced

4 spring onions, finely sliced

¼ carrot, finely sliced

1 sachet of itsu miso

1 tablespoon of white wine

1/2 tablespoon of sugar

10g of butter




Turn the oven to 180C

Place 2 sheets of foil on an ovenproof tray (enough to wrap over the fish fillets)

Place each fish fillet in the centre of a sheet of foil

Sprinkle the mushroom, spring onion and carrot on top of the fish

Melt the butter and mix together with the miso, white wine and sugar

Pour over the fish

Wrap the foil over the fish to make into parcels

Bake for 15 minutes. Serve and enjoy!
